gRPC reference

Slipstream serves the Yellowstone Geyser gRPC service. Its messages, from SubscribeRequest to every kind of SubscribeUpdate, are defined in Yellowstone's own geyser.proto, and that file is the reference: we do not fork it. The quickstart and filters cover what most clients use.
